METHOD: • Firstly, start by preparing a puree from the non-seeded orange. Strain if you wish to, else keep the pulp for a nice pulpy texture. • Soak the saffron strands in water for at least 10 minutes. • In a pan, heat some LITE HOUSE Rice Bran Oil, roast cashews and raisins till cashews turn a little brown in colour and raisins puff. Transfer to a plate. • Now heat some LITE HOUSE Rice Bran Oil again to roast rava/sooji for 6-7 minutes. Keep stirring and roast until aromatic. • Add hot boiling water to the roasted rava/sooji. • Let the rava/sooji absorb water, keep stirring. • Add the orange juice (with/without pulp) along with sugar. • Pour the leftover LITE HOUSE Rice Bran Oil and cook on medium flame by stirring continuously. • Add the orange zest (optional), cardamom powder, soaked saffron strands and roasted cashews along with the puffed raisins. • Give it all a quick mix and switch off the flame. • Your Narangi-Orangy Sheera is ready to be served. Enjoy Your Winters With Tasty & Healthy Mooli-Gajar-Gobhi Ka Achaar Prepared by Ms. Hemlata • 1 cup length-wise sliced radish • 1 cup length-wise sliced carrot • 1 ½ cup cauliflower florets • ¼ cup green chilli (slit in half) • ¼ cup garlic pods (slit in halves) • ¼ cup length-wise sliced ginger • ¼ cup fresh turmeric (optional) • 1 cup mustard oil • ½ tbsp kali mirch/black peppercorns • 1 tbsp dhaniya/coriander seeds • 1 tbsp jeera/cumin seeds • ½ tbsp ajwain/carom seeds • 2 tbsp yellow or black sarso/mustard seeds • ¼ tsp hing/asafetida • 1 tbsp methi dana/fenugreek seeds • 1 tbsp kalonji/nigella seeds • 2 tbsp sauf/fennel seeds • 1 tbsp amchur/dry mango powder • 2-3 tbsp white vinegar • 3 tbsp salt or as per taste • 1 tsp haldi/turmeric powder • 1 tbsp kashmiri lal/red chilli powder INGREDIENTS: METHOD: • Firstly, in a pan, boil water and steam the vegetables for at least 4-5 minutes or until soft. • Transfer the vegetables to a clean towel and dry completely, leaving no moisture at all. You can dry under the sunlight for 3-4 hours as well, if you have time. • Heat a pan on low flame, add sarso/mustard seeds, kali mirch/black peppercorns, jeera/cumin seeds, dhaniya/coriander seeds, saunf/fennel seeds and methi dana/fenugreek seeds. Dry roast on a low flame till they turn aromatic. • Let it cool completely before grinding into a coarse powder. Keep aside. • In a large kadai, heat mustard oil until smoking. Turn off the flame and let it cool. • Now, in the hot/warm oil, add hing/asafetida, turmeric powder, carom seeds, kashmiri lal/red chilli powder, amchur/dry mango powder, along with kalonji/nigella seeds and salt. • Further add garlic, ginger and green chilli. Slightly sauté. • Now add the vegetables – carrot, radish and cauliflower. Add the freshly grinded dry mixture and mix well. • Add white vinegar and mix well again. • Your Mool-Gajar-Gobhi Ka Achaar is now ready to be served.
